REBECCA'S GOOD OL' COLLARDS

our year-round gardening clime allows for something to be growing in the garden most all the time. collard greens are a southern staple, and here rebecca shares her simple concoction for collard goodness:

  • in a big pot, saute 1 large sliced onion in butter or olive oil
  • add chopped collards and a couple cups of water
  • bring to a boil, then simmer for 1/2 hour - 45 minutes
  • add salt & pepper to taste
  • or, add equal parts soy sauce & apple cider vinegar
